Bread Baking issues resolved

Fresh yeast has helped loads! I’ve baked bread twice in the last week. Perhaps it’s the feeling of hope or a return to normality.

I tried adding some roasted lentils to it and its turned out well! I’m super happy.


  • 250 g Dinkel / Spelt (a type of wheat)
  • 50 g roasted lentils
  • 200 g white flour
  • 300 ml water (37 deg. Celcius)
  • 10 g fresh yeast
  • 1 tbsp salt
  • 1 tbsp balsamic vinegar


  • 4 mins kneading in the Thermomix.
  • 45 mins rest
  • some kneading
  • 20 mins more
  • 30 mins baking in a gas oven at high temperature

Worked beautifully. It’s a modified recipe from one I found online. Will try and post a link to it another time.
